Absurd Bird, the new concept from Splendid Restaurants, the sister company of Splendid Hospitality Group, has secured its first two sites in London, M&C understands.
Splendid Restaurants, which is led by former Mitchells & Butlers (M&B) retail director Mark Hall, is believed to have secured the two La Pietra sites in Spitalfields and Soho for a launch of the chicken concept later this year.
It is understood that Splendid plans to open over 25 restaurants here under a number of brands over the next 10 years, including Absurd Bird and Jack & Alice, the fledgling wine bar, pantry concept.

As revealed by M&C earlier this month, Splendid will support the continued expansion of Jack & Alice, which recently opened its first site in Gerrard’s Cross, Buckinghamshire. A second site is set to open in Tring next month, Hertfordshire.
