Patisserie Valerie, the Risk Capital Partners-backed café chain, has confirmed that it will open the second site under its new restaurant format, Valerie’s Brasserie, at Union Square in Aberdeen.

The 2,190sq ft restaurant will be located in the centre’s main square and will follow on from the launch of the first site under the format last month in Glasgow. Unlike Glasgow, the Aberdeen site will also incorporate a wine and champagne offer.

Chief executive Paul May told M&C Report: “Glasgow is going very well. The evening trade has started slow but is building week on week.”

The group, which is on track to report FY EBITDA of £12m, is trialling a BYO drinks policy at the 80-cover Glasgow site that will feature a lunch and evening menu with main courses priced at £11-£12.

The menu and restaurant styling at Valerie’s Brasserie is based on combining the offer of the group’s core brand and Baker & Spice, its boutique bakery business.

If both trial sites are successful the findings will be incorporated in future openings and at selected existing sites.
