Randy’s Wing Bar, the wings and cocktail concept, which is due to open its next site in Aldgate later this month, is aiming to reach between five and 10 sites over all, MCA has learnt.

Co-founder Richard Thacker said the fledgling group’s focus would initially be on London, with Manchester and Leeds also under consideration in the future.

He said the new site at 30-33 Minories would have a different all-day offer to the Stratford original, with a speedy counter service at lunchtime, a wet-led emphasis after-work, and a sit-down restaurant offering in the evening.

Thacker said Randy’s was considering funding options for expansion – but said any investors would need to bring operator experience rather than just money.

He told MCA: “We see Ray’s working quite nicely at five or 10 sites – maybe more.

“We don’t want to grow quicker than we can afford to do in terms of keeping the quality.

“We have expansion plans but we will only move onto the next once the current one has been perfected.

“It involves skilled labour in the cocktail bar and kitchen, so we can’t just churn it out.

“In six to eight months we hope to be putting an offer in a third.”

He hopes Aldgate will be more wet-led in the evening than the Stratford site’s 40/60 wet/dry split.

He added: “We have a really good alcohol license, where people can come in and stand around and drink. I think we’ll hit the after work crowd, who can get lubed up, and order some wings to settle themselves before heading home

“In the evening we will be a bar that does food, rather than a restaurant that does cocktails.”
