Pivovar, the craft beer pub operator and beer importer, is to open three more sites under its Pavement Vaults banner before the end of the year, MCA understands.
The smokehouse and craft beer concept launched in York at the end of last year and Pivovar managing director Jamie Hawksworth told MCA that outlets in Cambridge, Newcastle and Edinburgh had been identified. He said he hoped all three would be operating by the end of the year.
“It’s been received really well,” Hawksworth said. “Rather than just coming in, eating and then leaving, people are treating it as a full evening experience. We’re achieving between 60 and 70 per cent wet driven [sales], which is an interesting dynamic, given the quality of food.”
Hawksworth added that high end wines were selling ‘surprisingly well’.
“We’ve got a really good mix of female and male clientele, [which is] driving sales of white wines, proseccos, champagne and cocktails. We also sell a full complement of cask ale as well as keg craft beer.”
