Orchid Pub Company, the 300-strong company backed by GI Partners and led by Rufus Hall, has opened its 11th Dragon site - a pub with a Thai restaurant. The site, the Rayleigh Lodge in Rayleigh, Essex, formerly served carveries. The kitchen will be headed up by chef Amnat Yantana, who learnt the trade at his home in Bangkok before coming to the UK seven years ago. He brings with him authentic recipes and flavours and his signature dish - Weeping Tiger, a garlic and light soy marinated sirloin steak topped with fresh mint and flamed with rice wine. Amnat has a team of six chefs working alongside him – three English and three Thai. “Everyone here has a real passion for both elements of our offering – the traditional English pub and authentic Thai restaurant – and it promises to be a really special place,” manager Emma Thompson said.
