Ryan Chetiyawardana, the former world champion bartender behind White Lyan and Danelyan, has teamed up with zero-waste chef Douglas McMaster to launch a cocktail bar at the latter’s Brighton restaurant Silo.

Chetiyawardana, better known as Mr Lyan, has collaborated on a menu of six cocktails inspired by the Silo’s food philosophy, which will be served from a newly refurbished bar in the Brighton restaurant.

One creation is a ‘sourdough sour’, which uses Silo’s own baked bread, smoked barley and Bruichladdich whisky, which is aerated with seaweed rather than egg.

Another serve is the kombucha highball, which combines Blackdown gin with the fermented tea in a tall spritz drink.

Chetiyawardana is a regular award winner, with Dandelyan at the Mondrian Hotel coming in at number three in the World’s 50 Best Bars list, which is now run by MCA’s parent company William Reed.

The bar-lounge is set to launch in June, with McMaster saying it would be more comfortable than the stripped back, reclaimed style Silo is known for.
