The renowned Hand & Flowers in Marlow, Buckinghamshire, has become Britain’s first pub to gain two Michelin stars. Restaurant Sat Bains in Nottingham is the only other new venue to achieve two-star status in Michelin Guide Great Britain & Ireland 2012, which is released tomorrow. Among the 15 outlets receiving their first star include high-profile chef Heston Blumenthal’s Dinner with Heston Blumenthal in Knightsbridge, London. This year’s Guide represents a positive result for pubs, with a further three gaining one Michelin star for the first time: the Sir Charles Napier in Chinnor, Buckinghamshire; the Butchers Arms in Eldersfield, Worcestershire; and the Black Swan in Oldstead, North Yorkshire. Thirteen pubs now hold one star. The Hand & Flowers, owned by Tom and Beth Kerridge, opened in 2005 and received its first Michelin star the following year. Guide editor Rebecca Burr said: “Tom’s cooking has risen to new heights. His dishes are sophisticated yet familiar, and are a perfect match for the relaxed surroundings of his charming pub.” She added: “This is a good news story for the British pub industry and confirms our view that pubs serving good food are the ones that continue to thrive.” Of Restaurant Sat Bains, which gained its first star in 2003, the Guide said: “Sat’s cooking has always been original and creative and now focus has been added to the flair.” Overall four venues now have three stars, 17 have two stars and 130 have one star. Meanwhile, Pied a Terre was downgraded from two to one star in the guide, while seven outlets lost their single star: the Samling in Ambleside, Cumbria; La Becasse in Ludlow, Shropshire; Ynyshir Hall in Machynlleth, Powys; Plumed House, Edinburgh; Champany Inn, Linlithgow, West Lothian; Tom Aikens (closed) in Chelsea, London; and Bingham Restaurant in Richmond, Surrey. Twenty eight outlets received given Bib Gourmands for offering high-quality value food.
