Living Ventures (LV), the north west-based restaurant and bar group led by Tim Bacon, has secured Aiden Byrne, the youngest chef to be awarded a Michelin star in the UK, to oversee its new fine dining venture – The Restaurant & Lounge @ Manchester House. The group is launching the venue, which will open next March, with the aim of gaining a Michelin star for the city and has secured several floors at Tower 12, Spinningfields for the venture. It is understood to be investing £1.5m in the project. The new site in the former Manchester House building will comprise the c60-cover fine-dining The Restaurant @Manchester House and a more informal c120-cover The Lounge @Manchester House. . Byrne will join Bacon and his business partner Jeremy Roberts as a shareholder and director of the new venture. Bacon said: “It is incredible that a city of Manchester's size and pedigree does not have a starred restaurant, there should be three or four at least and we at Living Ventures would like to get the ball rolling. I invite other chefs and proprietors to join in the endeavour.”
