Byron, the better burger brand, has appointed Simon Wilkinson as its new chief executive.
Wilkinson has most recently been working as CEO Consultant to investment firm Carlyle Group and as an advisor to Parkdean Resorts. He was previously chief executive at La Tasca Restaurants, leading the turnaround of the business before it was sold to the Casual Dining Group where he became a board director and the managing director for Strategic Options.
Byron, which operates 53 restaurants across the UK, was acquired in 2018 by Three Hills Capital Partners.
Mauro Moretti, managing partner at Three Hills, said: “We are thrilled to have Simon on board for the next chapter of Byron’s story.”

With Simon joining as CEO we know we have been very fortunate to have attracted a top-class executive who will lead the excellent Byron team to refurbish the estate later this year and drive the brand forward. And in the coming months we will be making further appointments which will complete the restructure of Byron’s top management team.”

Simon Cope stepped down from the chief executive role in December after just over a year with the company, including taking it through a Company Voluntary Arrangement (CVA) process.
