Vital Ingredient, the London-based tossed salad-to-go concept backed by American-Estonian real estate entrepreneur Paul Oberschneider, has appointed Paolo Peretti, who has previously held senior roles with Pret A Manger, BHS and SSP, as its new managing director, M&C Report has learnt.
Most recently Peretti was operations director, Restaurants at The Sultan Center in the Middle East and also had a stint as an operations director at Leon.
He will be will be heading up Vital’s management team alongside recently appointed finance director John Moulton, which will operate the company’s 17 central London stores and facilitate further expansion.
Founder Alex Heynes will focus on brand development and securing further outlets in central London, regional cities, shopping centres and travel hubs.
Moulton joined Vital from Tie Rack Retail earlier this year and after the departure of chief financial officer Tim Hobbs.
Last year, Vital appointed advisors as it sought to secure private equity funding to aid its next stage of development.
The group appointed Altium to advise on its funding options.
