Strada, the Tragus-owned brand, has appointed Italian-born Nico Tortorelli as its new executive chef to develop menus across its 69-strong estate.
Tortorelli has been promoted from within to steer menu development that will ramp up Strada’s emphasis on seasonality and regional variations in Italian food. He is now rolling out dishes for the summer menu.
Born in Puglia in the south of Italy, Tortorelli has worked for Strada since 2008.
He said: “I am delighted to be leading the development of our menus and to differentiating our product as the freshest and most authentic. We are passionate about Italian food, and I am looking forward to asserting Strada’s presence as the home of traditionally cooked Italian food in the UK.”
