Nicolas Gaillot has left La Bottega, the Italian deli and café concept, to return to Le Pain Quotidien, the all-day bakery and cafe concept, as its new head of business development.

Gaillot previously spent six years at the company including stints as operations manager in the UK and director of operations in France.

He joined La Bottega, which is backed by Pembroke VCT, at the end of 2014 after three and a half years as director of operations at the three-strong Villandry.

He joins the 25-strong group as it continues to strengthen its operational team.

Last year, Kate Skerritt, one of the founders of London-based healthy food-on-the-go concept POD, took up the role of head of retail and sales development, while Jon Abrahams joined as its new head of operations after over a year and a half as an operations manager at Paul UK

The company, which is led by Peter Jenkins, hired Jones Lang Lasalle to advise on its expansion into the regions. It is thought it is looking to add another 15 to 20 in the UK in the coming three years.
