Cosmo, the Hertfordshire-based, pan-Asian restaurant operator, has appointed Thomas Pawlowski as its new UK head of operations, as it looks to ramp up openings over the next two years, M&C Report understands.

Pawlowski joins the 13-strong group after nearly two years as head of operations at Gordon Ramsay Holdings. Previous to that he spent three and a half years as an operations manager at Patisserie Valerie and spent almost six years at Pizza Hut.

Last week, the Tom Chen-led Cosmo confirmed it will open an 11,000sq ft outlet in the Trinity Leeds shopping centre on 28 November.

The chain, which recently announced it had taken a site at Town Centre Securities’ New Front leisure scheme at the city’s Merrion Centre, has invested more than £1m in the new 200-cover restaurant.

The 13-strong group is to ramp up its presence in the North of England, with up to six openings planned for the region in the next 12 months.

It has a further opening lined up for this year in Sheffield, plus launches in York, Liverpool and Blackpool in the pipeline for 2014.

It is thought to have a further sites planned for the next two years, with London, Preston and Birmingham part of its pipeline.
