Bill’s Restaurants, the Richard Caring-backed chain, has appointed Jamie Gordon, formerly of the BII and Greene King, as its new formats director, MCA understands.

Gordon joins the company after brief stints as interim people director at both the Ivy Collection and Bill’s.

It is thought that Gordon will continue the work started by Graham Ford, Bill’s now executive director for the UK, who was looking at ways to evolve the concept.

It is understood that the company has been developing a smaller coffee/bakery/deli format, which has the working title Little Bill’s, to complement its existing concept.

Gordon was previously group head of recruitment at Greene King and interim programme director at the BII.

In July, Bill’s carried out a restructuring of its management team, which saw chief operating officer Roberto Moretti and managing director Scott Macdonald leave the company with immediate effect.

At the same time, Ron Lento, who stepped down as director of food & beverages for Whitbread Hotels & Restaurants earlier this year, joined the company in the new role of innovation director; whilst Graham Ford, the former chief executive of Jackson & Rye, moved from director of new format development to executive director, UK operations.

The changes came just over a month after Mark Fox, the former managing director of Starbucks UK, joined the company as its new chief executive.
