Gavin Adair has stepped down from ASK Italian as its finance director to join Wahaca as its new head of development, M&C Report understands.

Adair spent three years at the Gondola-owned ASK.

He has been replaced in the short-term by John Canning, who has taken up the role of interim head of finance at the c120-strong chain. He previously held similar roles at the Rushmore Group and Gaucho.

Adair joins Wahaca as its moves closer to securing its 12th site in London, near Oxford Circus.

The Mexican street food restaurant concept led by Thomasina Miers and Mark Selby, which recently secured its 11th site in London, in St Paul’s, is believed to be in advanced talks on a site in Great Portland Street.

The group, which recently opened units in Islington and Waterloo, has secured two former retail units in One New Change for an opening later this year, one of which will operate as more of a takeout operation.

The company believes it can eventually grow to an estate of between 15 to 20 restaurants in Greater London.
