Whiting & Hammond, the eight-strong, south-east based multiple pub operator, would look to double in size over the next 10 years and could enter the hotel, brewing or outside catering markets, managing director Brian Whiting told the Casual Dining Show.

Speaking on a panel of pub operators, Whiting said: “Anything above 18 to 20 makes it a tough operation and something has to give.”

Asked about other potential avenues for the business over the next decade, he said he could look to diversify. “There’s nothing to say we wouldn’t go into hotels, brewing, something like that. Maybe even outside catering.”
