Mark Fuller and Paul Raymond, the team behind Sugar Reef, are to open a boutique hotel and restaurant off Regent Street in London. Fuller told Restaurant magazine "We have identified a property which, subject to being sanctioned by Westminster Council, we believe would make a wonderful boutique hotel with 26 bedrooms and a 50 to 60 cover restaurant." Fuller added that he believed London had reached capacity for nightclubs and standalone restaurants but said, "What it does need is quality boutique hotels with restaurants, similar to the ones in New York." Fuller’s business partner Garry Hollihead will oversee the new restaurant kitchen and menu in the style he established at the Embassy and Inn on the Green.
