Hare & Tortoise, the Japanese casual dining concept, has acquired a new site on New Bridge Street in Blackfriars for an annual rent of £70,000.

The four-strong group, which was founded by Ding and Yvonne Chu, plans to turn the 2,500sq ft site into an 85-cover restaurant.

The concept is based around Japanese and South East Asian cuisine served in a modern environment for an average spend per head of £10.

The existing restaurants in Bloomsbury, Putney, Ealing and Kensington all provide a take away service which accounts for about 15% of sales.

The partners plan to expand the venture across London.
