Ever So Sensible Bars, the company run by two former Bass Leisure Retail managers, says it wants to roll out two more of its Dogma bar-and-restaurant operations in the next year.

The company, founded and run by managing director Chris Bulaitis, formerly divisional director for new concepts at Bass leisure retail, now has two Dogma bars after the opening of its latest £1.5m outlet in Lincoln.

Bulaitis said the Lincoln Dogma and the company's original outlet in Nottingham are turning over £35,000 to £40,000 a week, 85% of it drinks sales, "but we are growing out food business."

He said the secret of the outlet's success was their ability to offer up to five different retail experiences on the same site. The bars are geared towards the 25 to 35 age group, and Ever So Sensible is now looking for other suitable sites around the Midlands to open two more Dogmas by this time next year.

The company, which began in November 2001, is co-run by Martin Thomas-Taylor, a former Bass area manager. It also has two unbranded outlets, the Castle in Nottingham and the Muse bar in Sheffield.
