Gordon Minnis, the owner of the Calistoga Central and Californian Wine Lounge in Edinburgh, has acquired his second site in the city. Minnis purchased the leasehold interest on the former Tony Singh’s Roti Restaurant on Rose Street North Lane for an undisclosed sum with an annual rent of £21,000 and will open it as a Calistoga outlet. The 40-cover restaurant features a wine lounge and bar with a further 16 seats and a private room with a capacity for 14 people. The original Calistoga site is located on St Leonard’s Street. Singh, the co-founder of Roti, has relocated his outlet to Morrison Street in Edinburgh and also runs the Oloroso fine dining restaurant specialising in contemporary Scottish cuisine. Christie & Co handled the sale.
