Bavava Restaurants, the operator of the Döner Haus concept, is launching a new quick service format, Döner Shack, which will be expanded by franchising, MCA understands.

Döner Shack is opening at the Trinity Kitchen in Leeds in January 2019 after agreeing terms with landlord LandSec.

MCA understands Bavava, which operates three full service Döner Haus restaurants, will look to make Döner Shack its vehicle for expansion under a franchise model, due to its smaller footprint and lower set up costs.

The concept will specialise in an elevated, German-style doner kebabs, with the debut in Leeds a kiosk-type format as part of the street-food oriented food hall.
