Paul, the French baker and café concept, is to trial a smaller “walk through” format next month in London.

The company is to open the new format, which will be around 500 sq ft in size, near Fenchurch Street in the City.

Matthew Brint, senior projects manager, said: “Typically, our sites are 1,800 sq ft to 2,000 sq ft in size with seating internally and externally. However, the walk through format will only have seating externally and a smaller range version of our products.

“We will initially see how the new concept does before considering further sites.”

Paul opened its 19th traditional site in Kings Road in the capital earlier this week, and expects to open five or six more outlets in London by the end of September.

Brint said: “We like to have all our new sites for each year up and running if possible before the last quarter, so we can have a smooth run during what is traditionally a good trading period up to Christmas.”

The company is also thought to be interested in up to three of the larger former Benjys sites in London, which fell into administration for the second time in January.
