Nose-to-tail concept Flank is to open a permanent residency in collaboration with Print House, in Stratford.

It will be chef-owner Thomas Griffiths’ third version of Flank, which was originally conceived as a pub pop-up in Brighton.

The menu will focus on Southern style barbecued meats, pit smoked over wood, and served on a tray, with sauce and white sliced bread.

Griffiths said the concept was designed for all-day drinking and late-night visits from fellow chefs.

The chef is also looking to launch Flank Restaurant next year.
