Ed Bentley, the co-founder of Amano, the continental-style all-day café chain, has joined Pure, the London-based healthy fast food concept, as it looks to open three sites in 2012. Pure was formed in 2009 after a restructure of the Pure California business, which at one point operated five sites across central London. The chain, which is led by Spencer Craig and backed by Tim Wakefield, co-founder of Eat, currently operates sites in Beak Street and Goodge Street. It is currently looking for new sites with A1 class of use in high office density locations within the City and the West End. It has one site in development with two further sites being lined up for opening this year. Pure California, the healthy fast food concept, has opened its fifth site in Central London, in Ludgate Hill. The Amano brand was acquired by Rondanini, an Italian restaurant chain and specialist food importer in, together with two of the company’s sites in 2009, after the group went into administration in January of that year.
