Whitbread, the operator of the Premier Inn and Costa chains, has acquired the Brasserie Gerard site in London’s Belsize Park. The leisure group intends to continue to operate the site as Brasserie Gerard for the time being, but will eventually convert the unit to its Thyme restaurant brand and operate it in conjunction with a nearby Premier Inn. The site was part of the ex-Paramount Restaurants estate, which was placed into administration last November, for an undisclosed sum.
