Pure, the London-based healthy food on the go concept, is looking for sites in London to open four new sites in the next 18 months to bring its estate to ten.

Director Spencer Craig told M&C Report: “The plan is to get to 10 by the end of next year, opening another four in office locations in central London.”

He said there will be a seventh site this year “for definite” and a further three openings spaced throughout next year.

The self-funded group targets the breakfast and lunchtime office worker lunch market in dense central London areas, which Spencer said is a long way from saturation: “We could be in many areas without affecting our own business already.”

Potential venues include Holborn, Victoria, Mayfair and London Bridge to complement the existing sites at Soho, Fitzrovia, Covent Garden, Bank, Moorgate and Canary Wharf.

“We have been really fortunate to have six sites that are profitable and in good shape. We are not in a rush and we want to pick the right site,” Spencer said.

Although expansion outside of the capital is not on the cards at this stage, Spencer said they would not rule it out in the future.

Pure was formed in 2009 after a restructure of the Pure California business, which at one point operated five sites across central London.
