Paddy & Scott’s, the East Anglia based coffee shop operator, has said it will add another site this year as part of plans to roll-out its high street model over the next five years.
Co-founder Paddy Bishopp told M&C he envisages the next coffee shop site opening in November or December at the earliest and is considering Cambridge and Norwich as potential locations towns as well as other market towns around East Anglia.
Bishopp said market towns and the suburbs of larger towns would be best suited to the model and sites of between 50 – 65 covers would be preferable.
Having opened its third venue in Hadleigh, Suffolk, in April, co-founder Paddy Bishopp said he would consider extending the partnership with East of England Co-op. The café is at the front of the store giving exposure to the brand as well as increasing sales for the supermarket - according to Bishopp.
At the existing three sites the lunch menu has been enhanced with a panini menu, Bishopp said the breakfast menu has proven popular but the lunchtime trade was falling short of expectations.
As well as the lunch range, Paddy & Scott’s has added a summer drinks menu including iced coffees, sorbets and its Single Origin Coffee club featuring rotating guest coffees.
