After being listed in a further report on tipping by the Evening Standard as one of the restaurant groups using the service charge to increase their staff salaries, Banana Tree co-founder Anne Chow addresses the issue and defends the system the growing brand has in place, which it believes is better for its staff and for the industry in general.
