Restaurants and pubs will need better information on the origin of food and ingredients as customers are becoming increasingly concerned about the food in the wake of the horsemeat and Halal chicken scandals.
Lynx Purchasing believes eateries will need to forge closer relationships with suppliers to ensure traceability of food to give confidence to consumers.
“As consumers become increasingly interested in the provenance of their food, more of the operators we work with are asking us to link them with suppliers that share the same values and commitment,” said John Pinder, Lynx managing director.
In its ‘Summer 2014 Market Forecast’, Lynx recommends buying meat from the UK to enhance accountability by shortening the supply chain and lowering costs. Following a mild winter it recommends fruit and vegetables bought from the UK will also be of good value.
“The added benefit of making home-grown produce a feature on menus is that it helps operators send a clear message about provenance,” said Pinder.
