Entrepreneurs Raymond de Fazio, Caroline Bennett and Kevin Finch are the latest names to join the list of top line speakers for this year's Restaurant 2003 conference in London on October 14.

De Fazio's latest creation Osia, a showcase for modern Australian cooking, recently opened on London's Haymarket. It is already grabbing the headlines in the trend-setting press after a high-profile launch. De Fazio is also the man behind the Café Med chain.

Both Bennett and Finch had careers in finance before turning to the eating-out market. Bennett is the founder of Moshi Moshi, the original conveyor-belt sushi bar chain in the UK. Finch, former head of the Montana restaurant group, is now back in business with the roll-out of Sausage & Mash, a modern take on the traditional British "caff", and winning many plaudits into the bargain.

The three will be sharing their views on innovation, inspiration and what it takes to succeed as part of the conference's concluding 'Innovators on Inspiration' session.

Restaurant 2003 is organised by Martin Information, publisher of M&C Report, in partnership with leading property experts Davis Coffer Lyons. This year's one-day event will be held at the Bafta Theatre on Piccadilly.

Other speakers already lined up include: Nancy Kruse, president of The Kruse Company, based in Atlanta, and one of the leading experts on US food and menu trends; Tony Hughes, managing director of Mitchells & Butlers Restaurants and a pioneer of UK chain restaurants, on how operations can stay fresh, live long and prosper; and Mike Hoban, new strategy and marketing director at S&N Retail, and formerly with British Airways, on his new customer-focussed brief.

Leading international research company TNS, formerly Taylor Nelson Sofres, will provide a new perspective on UK eating out habits, with survey findings produced specifically for Restaurant 2003.

Martin Information founder Peter Martin will reveal MI's own nominations for the UK's most influential new concepts, as he looks at the impact of 'fast casual' on the UK market. This will include a case study on the UK's current hottest concept, Nando's.

A special pre-conference drinks reception open to all conference delegates will be held in central London on the conference eve, October 13. It will be followed by the opportunity to tour and sample some of the capital city's top eating out concepts.
