Rock and Sole Plaice, the Covent Garden fish and chip shop that is expanding after 140 years on the original site, is planning a satellite model of up to 16 express sites and five restaurants from centralised kitchen to roll out its fish and chip concept.
Ahmet Ziyaeddin and his brother Ali who own Rock and Sole Plaice have worked with James Bulmer and BGB Capital Partners to execute the company’s expansion and partner with potential investors.
The company is due to open its second restaurant in Covent Garden at the end of this month that will form part of its new model and act as an “innovation kitchen”, Ahmet Ziyaeddin told M&C Report.
“Other chains have tried fish and chips in the past but we noticed that a lack of centralised kitchens was a big problem so there was varying quality standards from site to site.”
“We see a ratio of each of the Rock and Sole kitchens being a hub to serve four or five satellite restaurants and express units as well.” The group’s first centralised kitchen is in east London which can facilitate up to four restaurants and up to 16 express satellites.
Ziyaeddin said: “Once the first two sites are done we will gauge the performance on these. If we get the figures we have forecast we will get to the second and third phases.”
According to Ziyaeddin there has been “a lot of interest” in the restaurant coming from outside of London and outside the UK but the focus of the next two restaurants will be central and east London.
He said the costings on the express model have been designed to be scalable and anticipates it would be well suited to transport hubs.
