Leon has announced that it is switching energy across its estate to 100% solar power.

The energy to power the Leon estate will come from over 1,000 sites across the UK.

It comes as the group launches its ‘Sunny Inside’ summer menu, featuring a new ‘hero’ summer dish (South Indian Spiced Fish) made using smoked coley from sustainable Scottish shoals and seasonal British runner beans. Other new dishes include a ‘Coronation-ish Chicken Salad (made with British chicken), a vegan-friendly falafel wrap, halloumi and smashed avocado burger and pots of avocado hummus.

Our Summer Seventeen menu will bring you the best of nature’s solar powered produce. We think nature has humankind’s best interests at heart so the more natural the food, the better it is for you.”

Leon has also announced a partnership with The Gut Doctor, Dr Megan Rossi. Dr Megan is a registered dietician and nutritionist with a PhD in gut health. She works as a Research Associate at King’s College London and leads a gut health clinic on Harley street.

She said: “I’m working with Leon because they are clear leaders in naturally fast food with an impressive menu showcasing the power of plants, which is fundamental to gut health.
