Leon, the healthy fast food chain led by Henry Dimbleby and John Vincent, has appointed Matthew Jones, former chief financial and operating officer of the US-based Barbeques Galore business, as its new finance director.

Jones, who has also worked at Maxxium in South East Asia, Barclays Funds and intercontinental Hotels, replaces Simon Drysdale,who joined Rex Restaurant Associates, the group headed up by entrepreneurs Chris Corbin and Jeremy King, as chief financial officer earlier this summer.

The 13-strong group recently said that it is looking to open 10 restaurants over the next three years, creating around 200 jobs in the process, with the funds raised through its recently completed bond scheme that aimed to raise around £1.5m.

The chain recently opened its first site in an airport at Heathrow’s Terminal 3 under its franchise agreement with American firm HMSHost.

It is thought that Leon is looking at number of further site opportunities in transport hubs with HMSHost both in the UK and internationally.

It is understood to be close to signing up on another three sites with redeveloped Buckingham Gate site in Victoria mooted as a possible destination next year.
