Brian Mbabazi, a former chef at The Ivy and Bob Bob Richard, has joined Des McDonald’s newly re-branded Vintage Salt restaurant.

Mbabazi will work alongside executive chef Lee Bull to serve the menu of fresh, sustainable haddock, cod and hand cut chips, as well as Cornish meat and fish.

New dishes will include; Roasted cod with sorrel sauce and sea purslane, Fisherman’s mixed grill with wilted sea vegetables and shrimp burger served with spicy tartare sauce.

The previously named The Fish & Chip Shop was re-titled following the success of McDonald’s On the Roof with Vintage Salt at Selfridges that has been fully-booked to serve more than 500 diners each day since it opened in May.

McDonald said: “The name change to Vintage Salt is the next logical step for the Fish & Chip brand. It is more reflective of what the Upper Street restaurant has become and will continue to evolve too, especially as we look to expand and open further Vintage Salt restaurants outside of London. I’m delighted to welcome Brian to the group; he will be driving force behind the name change and new menu.”
