Bone Daddies, the informal Japanese restaurant concept led by former Zuma head chef Ross Shonhan, has appointed Dinah Meister, former director of operations at La Bottega, to the same role as it moves close to securing another site, M&C Report has learnt.

M&C understands that Bone Daddies is in advanced talks to open a restaurant under its eponymous concept in London’s Shoreditch. The group opened its first Bone Daddies in Soho and one year ago added a second site called Flesh & Buns in Covent Garden.

Meister has extensive background in the sector, having worked as head of UK operations at Obikà Mozzarella Bar, operations manager at Ignite Group, general manager at Roka Restaurants, HR manager at Zuma Restaurants, and operations manager at Wagamama.

Last year Shonhan told M&C Report that he’d like the business to grow in various different guises to 10 sites over the next four years. He said: “One of the key things I’m trying to offer people is the ability to have good quality Japanese food at a relatively inexpensive price, but still offer some experience with that where people can have some fun.”
