Michelin Bib Gourmand-awarded chef Simon Shaw has opened a chicken restaurant concept called Bird and Beast in Leeds city centre.
The 4,000 square foot restaurant features an open rotisserie kitchen to serve 100 covers as well as private dining room.
The restaurant uses only premium free range Yorkshire chicken and all produce is supplied by free-range Sykes House Farms, in the heart of the Yorkshire Wolds.
Shaw, who also runs an award winning restaurant called El-Gato Negro in Ripponden, West Yorkshire, told M&C Report: “Bird & Beast is all about very simple, high quality food at a reasonable price accompanied with a stylish relaxed setting that will appeal to a wide audience making it an attractive concept for future rollout. However, we want to make sure that we nurture and perfect our operation in Leeds before we take the ‘Bird and Beast’ concept to other locations, Manchester being the first port of call.”
He said: “We’ve taken the popular British staple of chicken and chips and elevated it to the next level. Its high quality flavour without any fuss – we cater for everyone and since opening the feedback from Leeds diners has been fantastic.”
Bird and Beast will be extended in the autumn to include an adjoining bar called Bird and Beats.
