580 Group, the Dan Crouch-led venture, is looking to open further sites in London, after opening its latest site, the John Salt, following the freehold acquisition of the former Keston Lodge bar on Upper Street, Islington for £3.25m.

The company, which is also behind the Owl and Pussycat pub in Shoreditch and the Fellow in King’s Cross, took on the site following the surrender by Mitchells & Butlers (M&B) of its interest in the property. It was initially purchased leasehold in a joint venture by 580, which was able to acquire the property from the private landlord.

The group, which has partnered M&B in opening funky bar/pub hybrids in regional towns and cities, is keen to acquire additional freehold and leasehold opportunities in London.

Chef Ben Spalding, who has worked for Gordon Ramsay and Simon Rogan at his Roganic venture in London, is to join forces with 580 for a six month residency. Spalding has said that John Salt will offer “serious cooking with rare ingredients”, with tasting menus of four, eight or 12 courses on the venue’s mezzanine level and more straightforward food at the bar. There will also be a bar with the focus on cocktails and real ale. Mike Palmer of Lost in Catering has also consulted on the new venture.
