The Times carries an interview with two successful London restaurateurs who gave up managing successful urban chains to become chefs at a single restaurant.

Stephen Bull gave up his London chain for The Lough Pool Inn, a rural pub/restaurant near Ross-on-Wye. Mark Emberton swapped the top job at the Simpsons of Cornhill Group for the personal touch as chef at the Drapers Arms in Londons Barnsbury Street.

Both say they prefer the personal touch to managing a large operation.
