Patisserie Valerie, the Luke Johnson-chaired concept, is to double its presence on UK roadsides over the next three months.

The group, which already operates sites at the Extra Services at Beaconsfield and Baldock, will open early next year at Cambridge Services on the A1M Junction 17 and at Peterborough on the A1(M).

It will be joined at both by BakeHouse a new bakery-styled café concept that Extra has developed, which will serve hot and cold food throughout the day.

Bakehouse is due to open its first two outlets at Extra’s service area at Peterborough this month and Extra’s service area at Cambridge on the A14 in February.

Last month, Johnson told M&C that the focus for growth for Patisserie Valerie would continue to centre around opening in traditional high street locations but he stressed that the group would look beyond this.

He said: “I think we want to be opportunistic and as new opportunities like stations, motorway service stations, retail parks, outlet centres and so on come up we can take advantage. We seem to trade well across all of them, albeit with slightly different trading platforms.”

Ed’s Easy Diner, the fast-growing 1950’s American diner concept, which is currently in a sales process, is to make its debut on UK roadsides, after signing deals with service station operators Welcome Break and Extra Services.

M&C understands that the group, which is led by Ivan Schofield, will makes its Extra Services debut at the company Peterborough site on the A1M.
