Gail’s has revealed its latest store opening in West Bradbury Yard, Brentford, with a design that plays homage to the building’s industrial heritage. 

House within a listed warehouse that once served as a grocery store, the bakery has been seamlessly integrated into the existing structure, with food “taking centre stage.”

Gail’s, in collaboration with architects, Holland & Harvey, has introduced a simple backdrop by exposing existing brickwork, adding industrial light fittings and using sustainable acoustic panelling.

The craft bakery business has also partnered with the local Food with Like Community Pantry to donate baked goods at the end of the day to support their community food club.

Earlier this year, CEO Tom Molnar told MCA how Gail’s property strategy is intertwined with its sustainabile and economical practices.

The business always aims to utilise as much of the previous fit-out as possible, when approaching new store design, and when products are bought new, the materials should be higher quality and longer lasting.

Gail’s is aiming to build one site that has nothing new bought at all, with the best effort so including 70%-80% reused material.

“One of the biggest choices you make when you go and build a new Gail’s is, is how much can you leave? Our team is really good at upcycling, not throwing stuff away.

“Whatever you leave means you don’t need to take from the environment. It does mean that we don’t always get exactly what we want, you have some complexity that you have to manage forever, but that’s ok,” he explained.
