Tortilla, a Mexican fast-casual dining concept backed by high-profile restaurateurs, is set to launch its second site in London as part of a roll out of the brand.

The 2,000sq ft site will open in the Land Securities’ Bankside development behind the Tate Modern in September.

The 70-cover outlet, which will be based on the same format as the original site in Angel with an assembly line, will be slightly more upscale and will include individual tables and counter seating, as well as communal benches.

The company, which was founded by Brandon Stephens, has 30 investors including high-profile names such as Maurice Abboudi, the former head of business development for Domino’s Pizza, Rohit Chugh, the managing director of the Cinnamon Club, and Dominic Lake and Patrick Clayton-Malone, owners of Canteen.

Stephens told M&C Report that the group was looking to raise additional finance to fund the expansion, which would include a combination of bank debt and equity, as well being in negotiations with a venture capitalist organisation which had expressed interest.

Stephens said: “We have proven the business model and we now want to expand quickly and get economy of scale so we can build a brand.

“We have seen several new entrants with similar ventures into the market and I think that this Mexican-style concept is the next big thing.”

The group, which is based directly on the Chipotle Mexican Grill brand in the US and serves California-Mexican cuisine, is currently looking for new locations in London such as Covent Garden and Canary Wharf.
