Patisserie Holdings, the AIM-list group, has launched an evolved version of its Patisserie Valerie brand at its site in Selfridges, Birmingham, which includes furthers nod to the restaurant sector, M&C Report understands.

Previously trading as a take away counter only, the Bullring-based store has now been relaunched with a new restaurant area and the addition to the menu of sharing planks for two.

The first store to offer these sharing planks, customers can choose from either a seafood or country sharing plank.

Last year, the company launched to new “brasserie” format sites in Glasgow and Aberdeen as it looked to stretch trading into the evening.

The c95-strong brand is on target to have opened up to 20 sites by the end of its financial year on 30 September.

The company recently opened its first site in Wales, at the St David’s Shopping Centre in Cardiff and at the Beaconsfield services off the M40. It has also opened its second site in Cambridge and a new unit in Maidstone.

Announcing plans to float on AIM in April, Patisserie Holdings said it had identified over 250 further potential sites in the UK with similar characteristics to those currently trading under its brands, and that further opportunities exist in retail parks, concessions, service stations, transport terminals and brasseries.
