American entrepreneur Steven Novick is opening a fast-casual restaurant in London’s Drury Lane based around seasonal produce.

Farmstand will open on Tuesday and will trade from breakfast until late seven days a week, serving a menu of internationally-influenced, UK-sourced, nutritionally-balanced ‘Build Your Own’ and ‘Ready To Go’ options, available to takeaway or to eat-in.

The 30-cover restaurant takes its name from the US roadside stalls known as ‘farmstands’ which sell locally grown fresh fruit, vegetables and other produce, and were common in founder Novick’s hometown.

Breakfast options include ‘Four-grain porridge with organic oat milk’, ‘Coconut yogurt topped with seasonal compote, pumpkin seeds & cinnamon’ and the ‘Farmstand Breakfast Box’, that includes two free range eggs, roasted tomatoes and spinach. From lunchtime onwards, Ready To Go boxes will contain one main (with beef, chicken, fish and vegetarian options available) alongside two seasonal side dishes (or a choice of three sides if no main). Alternatively, the Build Your Own selection will be available daily from 12 noon until late, allowing customers to create their own lunch or dinner box combinations, choosing from a selection of four main options, eight side dishes and two extras. The Build Your Own option at Farmstand has 18,432 potential menu combinations.

Signature main dishes will include a spicy ‘Grilled harissa chicken’ (marinated for 12 hours) and a flavoursome vegetarian and vegan-friendly ‘Split fava bean, butternut squash & cumin’. Side dish options will change regularly, as will the mains and extras, reflecting ingredients that are available seasonally and locally, and will include ‘Charred broccoli with chilli & garlic’ and ‘Cinnamon-roasted heritage carrots’. Farmstand’s Build Your Own boxes can also be topped off with optional extras, such as house-made salsa or fresh seasonal leaves.
