Jamie Barber, the restaurateur behind the Cabana chain, is to launch a smaller version of Mayfair-based Hush restaurant and bar on the site of the former Villandry Kitchen in London’s Holborn, M&C Report has learnt.

Hush Brasserie will launch later this summer after Barber has carried out a complete refurbishment of the Holborn site, which he bought back earlier this year after trading it under the Villandry Kitchen banner for two years.

It is understood that Barber will look to open a further Hush Brasserie at One St Paul’s Churchyard next year, after raising new funding from existing shareholders, including Adam and Sam Kaye.

Barber told M&C Report that the Holborn site was one of favourites and would be perfect for the “little, local version” of Hush.

He said: “We don’t want to do a huge rollout of this version but if there is an opportunity in an exceptional location then we will look at it. Hush is a special brand and I am confident this relaxed international brasserie format will prove very popular.”

Barber opened the original Hush over 10 years ago with Geoffrey Moore, son of former James Bond, Roger and plans to carry out a “significant refurbishment” of the site this summer.

He said that the original site had shown double-digit growth every year since its launch.
