According to food purchasing service, Beacon, which has links with many of the top pub food suppliers, the licensed trade is responding to concerns over obesity. Beacon says that the demand for fresh fruit and veg has risen by 23%, while sales of crisps and snacks are down by a third, as pub buying habits change dramatically in response to consumer demand and an increased awareness of the benefits of healthy eating. Beacon director, Karen Packham, said, "The food industry has a very important part to play in helping to improve the nation’s diet."
