Dominic Ford, the entrepreneur behind the Butcher & Grill, is to launch a new restaurant format at the site of Hotel Indigo, the boutique outlet owned by Intercontinental Hotels Group (IHG). M&C Report understands that he will be introducing an as yet unnamed neighbourhood style concept at the hotel in Paddington, London – which currently operates a restaurant called Phi Brasserie. Shelley Sandzer acted on behalf of the hotel’s freeholder London Town Hotels in a bid to bring in Ford. There are currently two Butcher & Grill sites in Battersea and Wimbledon Village – both of which feature the combination of a high-end butcher’s shop and informal restaurant. Ford also used to be managing director of Bincho Yakitori, the Japanese restaurant group. Hotel Indigo is a boutique brand by the world’s largest hotel chain, which also operates Crowne Plaza and Holiday Inn. Its first UK Hotel Indigo opened in Paddington in 2008, after being launched in Atlanta. There are also plans for a second site in London, for hotels in Liverpool and Newcastle.
