The cost pressures on restaurants in London are becoming increasingly onerous as the market becomes saturated and both wages and rents rise. Research shows only 10% of Britain's full-service restaurants take more than £10,000 a week, and more than half those are in the capital.

In a bid to attract more diners, companies are focusing heavily on brands - like Caffe Uno, Garfunkel's, Fish! and Wok Wok. But there is a fear that people seeking upmarket dining will try to avoid restaurants that feel like part of a chain.
