Wahaca, the Mexican street food restaurant concept owned by Thomasina Miers and Mark Selby, is to open its fourth venue in Wardour Street, Soho this October. The 145-cover restaurant will feature a top floor dining room with downstairs cocktail bar and private function space, designed once more by architects Softroom. While each of Wahaca’s restaurants have been designed with a strong environmental focus, the Wardour Street site will be specifically assessed under the BREEAM guidelines that ensure the sustainable design and construction of a project. In a bid to boost its green credentials, the Wardour Street site will incorporate a water efficient shower to encourage staff to walk or cycle to work, two unique waste rooms for the recycling of 90% of the business’s oil, glass, food and cardboard, plus the ethical sourcing of British meat, sustainably-caught fish and seasonal vegetables.
