Gordon Ramsay is determined his Le Trianon restaurant in Paris will be a success despite being savaged by French food critics before it even opened. He says he wants to win three Michelin stars for the establishment in Versailles. Although 2007 was his annus horribilis, Ramsay remains confident about the future. He believes his mid-price restaurants and pubs will cushion him from any economic downturn. Fine dining, he insists, is also growing strong and claims he gets 600 calls a day at Gordon Ramsay at Claridge’s. He also has an outlet opening at Heathrow Airport’s new Terminal 5.
