Consumers are increasingly seeking out experience-led dining as they seek to justify spending, with new concepts capitalising on the trend for dining experiences, according to Lumina Intelligence.

The Concepts to Watch report (January-March 2023) highlights the rise of unique dining experiences that are hard to replicate at home, with restaurants such as Humo in Mayfair and Jacuzzi in Kensington offering high quality dishes in immersive surroundings and lively atmospheres to attract customers during the cost of living crisis.

Health-led food trends are another driver of new concepts, with new openings such as the Urban Greens salad bar in St Paul’s offering fresh salads as a popular lunch option for workers looking for a healthy alternative.

The report also points to made-to-go roll concept Roll Baby, which offers gluten-free and vegan options to capitalise on current health and flexitarianism trends.

Sustainability has also driven new concepts and product trends, resulting in an increase in meat alternatives. Lumina Intelligence highlights Papi, a Hackney restaurant that has launched a menu focused on zero waste using regenerative meat and sustainable seafood, while a rising number of brands focus on using local produce.
